Salsify (aka Yellow Goatsbeard) is one of our favorite all-time wild vegetables and the entire plant is edible. One of our favorite ingredients to harvest from Salsify in the early spring are the roots. In this video, we show you how to easily harvest these roots and how to clean so that you can use them in delicious recipes. Salsify has been cultivated as a vegetable in Europe and was brought to the USA by early settlers as a food crop. The Salsify you find in the wild are feral, meaning they escaped from gardens and naturalized in the wild. They can be found in almost every US state. We look for them in meadows, disturbed sites, pastures, and backyards. Many people consider them a weed! Little do they know that this plant tastes amazing and can offer an abundance of food for those looking to live off the land. Come join us as we harvest wild edible Salsify roots and their leaves.
